Nother smoker thread

Gona go to bed 12 ish. Set alarm for 430 ish to wrap at 165 degrees. Then figuring 5-8 hours to get to 200ish. I plan on trimming the point and cubing it and doing the burnt ends for another hour and a half after that

This thread inspired me to make jerked chicken thighs in my smoker.  I made the jerk marinade yesterday and the thighs have been sitting in it since.

I put them very wet and layered with the jerk because it dries down to a good caking in the smoker after 90 minutes or so.

I will post pics later...
