Seared and Broiled BACKSTRAP!

Threw this together tonight. Rubbed them with EVOO, and rubbed generously with my homemade coffee dry rub. Seared them in a very hot skillet for 30 secs per side, and finished them under the broiler. My wife likes hers med well/well...I like mine still mooing (or I guess grunting?) I slightly over cooked mine, as I prefer more red, but it was still great. If anyone wants the dry rub recipe or more info, I'll be glad to share.

Looks good. Does it get any of the coffee taste to it with that rub?

You can taste the coffee, but not overpowering. Gives it a nice flavor

This is more then enough for 2 straps..

 

The rub:

2 TBL spoons coffee (I like dark.strong coffee)

1.5 TBL spoons chile powder

1.5 TBL spoons brown sugar

1.5 TBL spoons smoked paprika. Use the smoked, not the regular stuff

1.5 TBL spoons salt

Pinch of ground cumin

Pinch of black pepper

Pinch of garlic powder

Pinch or onion powder.

 

Taste the rub, you may have to add a pinch more salt.. depends on how salty you want it.

Like you i like it still grunting    I would do something similar although my rubs have never included coffee but will give it a try - I would not have transferred to broiler, I would have seared both sides good, turned off heat and covered to let it sit in it's own juice for a few minutes.
