Do not be shy BucksandBows........You know you are a HIGHLY Qualified contender Brian! One word of caution......... Haskell Hunter self admittedly has 2 modes. Zero or EXTREME. I have seen this in action and it is all GOOD. Just sayin'........ Bucksnbows Posted July 9, 2019 Share Posted July 9, 2019 This thread just inspired me to smoke my "Pork Candy" for Lou's get together on Saturday. That's not on the current list of what others are bringing and I can do them at home as they travel well. Pork belly cut into large cubes, dry rubbed, then smoked in a tin pan, turning frequently at first until a good bark sets in and they take on the hickory (or apple, or whatever you like) flavor. Once they are at that stage with a decent bark, I add a mixture of bourbon and maple syrup with some more of the dry rub and glaze them, again turning a few times until sticky. After that, they are bit sized finger food. Nothing pro but a lot of local and if ribs are in the competition I AM IN! Last contest two contestants threw in the towel after trying mine.
