Amazing how sharp the knives look when they cut up the tuna. You don't want to slip with one of them or you might be missing a finger or more

Extremely precise in their cuts.  Truly an art form.

Yeah i watched that too. Never hitting the board with the blade. What ever kind of steel they are made, i want a custom filet knife out of it.
