Quick n easy backstrap

Pan seared a back strap with bbq rub with mushroom n onion.  Made mashed potatoes with red potatoes sour cream ad horseradish mixed right in damn its good

I trimmed it down for just me but 5 lbs red potatoes 1/4 cup chives 1 cup sour cream 1 cup fresh horse radish.  I some times add cooked n crumbled bacon..  they are awsome
