I use swiss cheese when I make brats. I also do an italian sausage with red wine and pecorino ramano cheese

Fresh sausage. I have a butcher that makes mine, he uses mozzarella. He said I could bring my own if I wanted. I was thinking of using sharp provolone like Tom Elefante used to! :up:

I use extra sharp white cheddar a lot. Mainly for summer sausage and snack sticks.

I like Kenny's idea with the Pecorino Romano for fresh sausages.

I made a batch with my uncle and cousin a few weeks ago. It came out great! We used a little provolone and a little parmesian and a lot of garlic.
