Cream cheese stuffed BACKSTRAP!

This was so good. And so different. So I sliced 2 backstraps to open them up, but don't slice all the way. Put under some cling wrap, use a meat mallet, and beat the shit out of the BS'S until they actually become flat. Season well with salt, pepper, onion & garlic powder. I filled them with cream cheese, diced jalapeños, onions, and scallions, and a little bit of garlic, only 1 clove for both BS'S. I did mushrooms on mine, the wife doesn't like mushrooms. Before rolling them, I sprinkled some panko breadcrumbs on top of the mixture as well. I held them together with toothpicks, seasoned the outside with a little Montreal seasoning. Cooked about 20 min in a preheated oven, set to 350 degrees. I think next time I'll take it a step further, and wrap them in bacon. They came out delicious tho even without the bacon.

looks amazing.  I am at the point in my life where my absolute favorite meat is simple, dry-rubbed, grilled backstrap cooked rare to med-rare but closer to rare.  Slice medium thick and cover in it's natural juices.  I love that so much, I would be very reluctant to give them up for this. However - I bet I could smash out some hind quarter steaks and achieve same.

I kill lots of deer. I get tired of the same old stuff all the time.. hence this meal lol

Heres another you can try . Stuffed with a mixture of grated Parmesan , panko bread crumbs , seasoned bread crumbs, pepper  , olive oil,  garlic, mix that all in a bowl flatten the meat out the same way then put slices of prosciutto on top of the meat put the mix on top of that then roll it up and wrap it string.then rub the outside I use cowboy rub. Brown it in a pan with butter then put it in the oven To cook the rest of the way . It was a big hit on Christmas Eve even with the non venison eating crowd

Looks outstanding except for the Bacon wrapped around the outside. I hat bacon.
