Clams and Venison BOLOGNESE!

Didn't see anything tonight in the woods.. but had a great meal. So I made one of my favorite venison things yesterday, for tonights dinner.. a thick, hardy meat (bolognese) sauce. I like to make this the day before eating it, and letting it sit in the fridge over night so the flavors really develop. This turned out fantastic. The wife picked up some clams so I could whip together a quick appetizer.. Zappa di Clams, white. Had a great little Italian dinner.. of course complete with wine.

 

For the clams.. put olive oil in a pan, sauté garlic, red pepper flakes, and diced cherry tomatoes. When soften, add 1/2 cup chicken broth, and 1 cup of white wine (not cooking wine, I hate that shit.) Bring to a boil. Add your clams, 3 tablespoons of butter, and cover the pan. After about 6-7 min, all the clams should be open. Throw out the ones that didn't open. Top with fresh basil, or parsley and serve. For the bolognese.. figure that one out yourself cause that's my ONLY recipe I don't give out LOL.

Thanks. I always read that if a clam doesn't open, it means it's dead.. and therefor not good to eat. Not sure if that's true, but that's what I've heard.

if a clam is dead it will be open before cooking  and will not close, sometimes for who knows what reason they don't open and sometimes they are full of mud..

This looks incredible. Good tip for the clams is the night before put em in a pan and fill with waterline coming just above the top of the clams. Sprinkle flour on top of the water and leave it. Clams will spit out all the sand and mud in em during the process of eating the flour. The bottom of the pan will be full of crud the next morning. Give it a try

Good tip. Will definitely try it out next time
