Very nice. I worked with some Japanese chefs back in the 1980s, they really were artists when it came to food preparation. I stopped in one time at the restaurant where one of the guys worked as a sushi chef to get a quick demontration (before the whole sushi thing exploded), the whole process that is involved was quite interesting.

Catch & release is for guys who don't know how to cook. :cook:

All but the salmon and crab sticks. Salmon was wild salmon caught awhile ago and flash froze in vacuum sealed bags
