Smash It :headscratch: never heard of doing that, what does that do I just put a Plate and weight it down in the Crock.  But mostly make it in the Fall with the New Cabbage Sweeter.

My understanding is that smashing it releases more water to make the brine and the resultant bruising also opens up micro fractures which helps the lacto-bacteria to feed and thrive.
