Summer Sausage

I had some summer sausage made with the latest deer I shot.  I've never had it made before so I have a few quick questions.  How long will it keep?  I have it in my fridge right now, is the the best place to store it?  Can I freeze some?

I make about 50 lbs a year. I cut them into thirds, vac pack them and freeze. I can't tell you if it lasts 12 months because it's usually gone in about 8.

Jorge made mine recently, it's awesome. He said about 45 days in fridge, or freeze it.

I use Hartman and he makes great summer sausage too. I have never had it last longer than 6 months at my house when frozen. The only reason it lasts that long is because I save some for a trip we take in April to my buddies cabin in PA. I would think it would last a year or so if frozen.

I had about 40lbs made last January... Still have some frozen and it is fine.. Once defrosted, you get about 2 weeks in the refrigerator..
