Bluefish Casserole

Fairly quick n easy, and tasty too . . .

 

1) Fry your bluefish in Italian Salad Dressing, being mindful to remove as much of the darker meat as possible. **

2) Boil a bag of egg noodles al dente

3) Add Bluefish, noodles, 2 cups of grated cheese, 1 cup of frozen peas, 1/4-1/2 cup diced onion, salt & pepper.  Mix all together.

4) Transfer to a baking dish and top with 1-2 cups of crushed potato chips and sprinkle a little more cheese on top of potato chips.

5) Bake at 425 degrees for 15 to 20 minutes.

 

** Note: you can take the bluefish that you fried in Italian Salad Dressing, let it cool, add Miracle Whip or Mayonaise, salt n pepper, diced celery, diced onions and make your own "Tuna" fish salad.  Goes great on crackers or a sandwich with lettuce, tomato and swiss cheese.

Bluefish handled properly and eaten fresh is pretty darn good. Thanks for posting Robin.

Yep, you gotta bleed it and put it on ice right away.
