Striper Ceviche

Hey all, I've got about 10 pounds of striper filling up my freezer and I am looking for new ways to cook it.  Has anyone tried making ceviche?  I have found a few recipes that basically entail dicing up the raw striper and submerging it in a mixture of lemon and lime juice, and I was hoping someone might have a little more insight than that.  Thanks in advance.

i love ceviche

i normally make it with shrimp or scallops, red onion, jalapeno peppers, and cilantro 

and lemon and lime juice 

 

scooping it out with baguette slices toasted 

 

great on a hot summer day next to the pool.

I basically do what ub1243 does to make ceviche, except I add a bit of sugar to the juices, along with salt & pepper.  I also use red peppers in mine.  Serve with a tobasco sauce and crackers.
