Injin Salmon Candy

Knowing that it was going to snow and I’d be trapped indoors I figured I’d Smoke some Indian Salmon Candy . Here’s a couple pics before it went in the Smoker .Its brined in Brown Sugar and Kosher Salt with a little Cayenne and Ginger (optional) Two larger Filets have Ginger and Sesame seasoning .

Love it also called Squaw Candy in Alaska 

Suggestion remove as much moisture to keep for long storage Mine never goes uneaten for long. Also, Have you ever done Gravlax Salt Sugar Dill poor mans LOX  ;)

PS, was it Wild - Farm Raised --------- Sockeye ( Red Salmon ) the best.

Farm Raised (57 Buck) I did do it with wild caught to the tune of $18 per pound so I tried the cheaper alternative, texture is almost the same , Wild was of course denser but tastes just as good .... doesn’t stay around long enough to worry about spoilage
