Turkey Recipies

I try to keep most of my recipes simple - but this one is a winner even though it takes a while to prepare and make:

 

Turkey Chimichangas

 

INGREDIENTS:

Chipotle Broth:
2 cups broth
1 tbsp chipotle en adobo

 

Flavor Base:
1 tbsp oil
1 onion
2 cloves garlic, minced
1 tsp chili powder
1/2 tsp cumin
1 can pinto beans, rinsed
1 cup cheddar cheese, grated
1/3 cup cilantro, fresh

 

Wraps:
4 10” flour tortillas
oil
1 tbsp flour
1 tbsp water

 

Rice:
1/2 cup long grain white rice
1/4 tsp salt

 

Meat:
1 turkey breast or 2 chicken breasts
salt, pepper, seasonings to taste

 

DIRECTIONS:

Pat meat dry, season with salt, pepper, other seasonings on both sides.
Mix rice with only 1/2 cup chipotle broth, salt; cover and microwave for 5 minutes.
*** Rice will not be fully cooked yet; it will finish cooking later. ***
In pot over medium high heat, cook onion in oil for 5 minutes.
Add garlic, chili powder, cumin to onion and cook for 30 seconds.
Add rice, beans, and remaining 1 1/2 cup chipotle broth to pot and bring to boil.
Place meat on top of flavor base in pot.
Cover, reduce heat to medium low.
Cook for 15 minutes (160 degrees internal temperature), flip meat midway.
Take meat out and let rest on cutting board for 10-15 minutes.
Put flavor base in bowl; rinse pot.
Cut meat into 1/2 inch pieces and put them in flavor base in bowl.
Put cheddar cheese and cilantro in flavor base in bowl; mix flavor base.
Mix flour and water in small bowl to make a paste with no lumps.
Microwave tortillas just to warm them up so they fold nicely.
Take 1/4 flavor base mixture and put in center of a tortilla.
Brush flour paste on the edges of the tortilla.
Fold over and seal tortilla on long edge using flour paste as “glue”.
Brush flour paste on tortilla short ends and fold edges to seal the ends.
Heat oil in pot. Use enough oil to at least cover bottom half of chimichanga.
Fry seam side down first, using tongs to place in/take out of oil.
Cook briefly (30 seconds?) on each side - watch closely because it burns very quickly!
Serve with salsa or other like side.

 

It's gonna look something like this, and its awesome. Careful with the chipotle en endobo, a little goes a long way for spiciness!
