I keep my venison in a brine for 5 to 7 days and then, smoke it for 2 to 3 hours.

Man, you guys are making me hungry, and wanting me to buy a dehydrator!   A friend of mine gave me some goose jerky from this past september goose hunt. Surprisingly good!! haven't had venison jerky but that looks really good!

Warm jerky is the best, BUT you better get ready for jerky belly. That is what my wife calls it when I eat too much jerky as I am making it. Looks good Lunatic.

6 hours at 130° in dehydrator. if u pack racks tight with strips then 7. 10 racks you will be making a batch and a half to 2 batches

I made the mistake of letting my brother( who is a spaz) use the last of my venison to make jerk. Big mistake he did it in the oven and hAnds down it was like tree bark off a swamp maple. Use a dehydrator or smoker if you can

think i polished off 5 lbs this weekend, i should of pulled the trigger on the dinker i passed on tonight so i could make more. he may not make it till friday if i keep eating it at this rate
