For all you lucky hunters tomorrow, if you like Tex Mex, give this one a try. Use fresh tenderloin or backstrap (backstrap seems to work better).

 

Venison fajita's with avocado lime crema and seasoned sweet potato fries with campfire dipping sauce.

 

-Butterfly the backstrap in half so the meat is thinner and cooks faster.

-Season with fajita seasoning, either make you own or buy a packet.

-Cook down onions, red and green bell peppers in olive oil, seasoned with the fajita spice.

-Get your grill hot, lay the backstrap on the grill for about 2 minutes per side, no more than that. You just want to get a good sear and some char marks for flavor.

-Cut the backstrap across the grain into strips for fajita's, and then throw them in the pan with the onions and peppers to finish them. 

 

For crema: 

1 cup sour cream, or greek yogurt

3 tbsp fresh lime juice

½ ripe avocado

½ cup fresh cilantro

1 tsp ground jalapeno pepper

1 tsp kosher salt

1 tsp cumin

Blend until smooth in food processor or Nutri bullet. It gets better after a few days in the fridge.

 

Pick flour or corn tortilla's and heat them or not, however you like. Top with crema and slices of avocado or cheese, or nothing. 

 

Cut your sweet potato fries evenly and thin, like McDonalds fries so they cook quicker. Coat in a bowl with olive oil, season them with chili powder, salt, a little cayenne and garlic powder and toss in bowl to coat well.

You can fry them in a fish fryer or bake them at 450 for 20 minutes on a rack, that's a bit more healthy.

 

For the campfire dipping sauce:

1/4 cup mayo

1/4 cup plain greek yogurt

1/2 cup of make your own BBQ sauce, or if you don't do that, add Sweet Baby Rays Hickory Brown Sugar BBQ sauce 

1-2 tsp chipotle powder

 

Seems like a lot of work but you can have this ready in about an hour, a bit quicker if you make the crema and dipping sauce the day before and just leave it in the fridge. 

 

We had these a few times this past week, they're awesome.
