Smoked Trout Recipe

Now take a thinly sliced baguette (toasted or not - your choice) and spread creme fraiche on each slice.  Add a generous piece of smoked trout (or salmon).  Top with a dollop of caviar and some minced raw red onions and you have some amazing eats for an appetizer!

2-3 cups of Brown Sugar and 1 Cup of Kosher Salt ( Adjust Salt to taste) , coat fish ( cut into Finger sized 3/4" Strips) cure overnight or until the fish is Semi Stiff, let air dry on a rack before putting in a smoker (you may want to induce a breeze with a Fan) Place in Smoker that's less then 160 degrees . smoke till Done 2-4 hours depending on how tight your box is..... Don't let the coating Crack . INDIAN Candy ummmm

looks great. but maybe im doing something seriously wrong because every stocked trout i ever ate was absolutely horrible not to mention the bones i kept pulling out. horrible. maybe the state needs to start stocking channel cats as much as trout. channel cat taste great plus are eating friendly.

slow cooking and smoke can fix some undesirable meat,. Look what it does to brisket, otherwise not edible:-)

This almost sounds too snooty for Jack's get-together, but we'll let you bring some anyway.   :D

Nope, you need a couple native brookies and you'll see how incredible they taste.
