With all the Turkey talk who and how does one Clean their Turkey?

Do a complete Plucking or just Skin them out.  There is a Livestock Butcher near me that I Buy Whole Suckling pigs and Fowl. 

They do a bird in 8 Minutes  Name the Farm Animal they have it from Goat to Steer.  Godek's in Marlboro  732-462-3699  Closed Mon-Tues. 

Call ahead weekends is a Madhouse.

I just breast them out and skin and cut legs off.

Spring birds I'll skin them out, save the breast meat and the legs, wings I keep to make trumpet calls if they aren't broken.

 

Fall birds I'll cut the wings off, then pluck the rest of the bird. I never thought to bring them somewhere to get plucked, might be worth looking into.

I cut the breasts out which are baked.  The legs and thighs go in the crock pot.  Has anyone ever oven baked a whole wild turkey?  I am wondering how the legs and thighs turn out?
