 2lbs ground venison, 2 eggs, 2 cups breadcrumbs 4 tablespoons oil, and Tony Chachere's  Creole seasoning to taste... Mix it all up by hand in a big bowl, skewer the cheese sticks (we used mozzarella this time, last time I used cheddar, and would like to try with pepper jack as well - it's all good).  The mozzarella does seem to retain better than the cheddar, less leakage.    If you ever played with play-dough as a kid, you should have no issue forming the meat around the cheese
