Cutlets from start to finish

Cut up one of the deer legs yesterday into cutlets, packaged them for the freezer...Decided to wait until my son was out of school today to to the other one with him. We cut it up into thin cutlets and placed 5-6 into each Hefty quart sized freezer bags for the freezer. They looked so good that we quickly made some small pieces after dipping them in bread crumbs. I used to use a mallet to tenderize the venison until a friend suggested a roller type tenderizer on Amazon. Very impressed with the new unit and was a great deal at $18.00 shipped.

Nice! I just made up venison meatballs, stuffed with green peppers and taco cheese, wrapped in smoked Turkey bacon.. gonna eat them tonight with pasta and vodka sauce.

 

Yours looks amazing, I love breaded meat.

I may need to get that tenderizer too! Thanks for the advice!

Looking great guys.

I do my cutlets in a similar way. Spice up some panko breadcrumbs with garlic powder, cayenne pepper, Italian seasoning, red pepper flake. Cut them thin and fry them up. Served on Italian bread with romaine lettuce and balsamic vinegar with shaved extra sharp provolone. I need to make them again soon. My mouth is watering

I would rethink your packing method after doing everything else the right way.

Even with all the air pushed out freezer burn in zip locks happens fairly quickly.

Just wrapping them in saran wrap before putting them into freezer bags adds months to the storage without issue.

Wrapped in saran wrap then freezer paper and those cutlets would look just like today .two years from now .

After all the effort to butcher at home it's worth the few extra minutes to wrap it a little better .
